Breton mackerel in a Dijon mustard cream, packed by hand in Concarneau. Les Mouettes d'Arvor have been canning on the Brittany coast since 1920, and the tins are still filled by hand — préparés à la main on the lid is not decoration.

The sauce is the point of this one. Dijon mustard at 11.5% and fresh cream at 7.8%, thickened only with rice starch and a little guar — rich enough to coat the fillets without burying the fish.

Serving it: cold, straight from the tin, on dark bread or boiled potatoes. The sauce wants something plain to sit on. Open it an hour before if you have the patience; it is better not fridge-cold.
