Handkäse is a sour-milk cheese, shaped by hand, and it is an acquired taste that German regulars will already have acquired.

It is low in fat, high in protein and very strong in smell — traditionally served mit Musik, which means with chopped onion in oil and vinegar, on dark bread with butter. Apfelwein is the drink that goes with it.
