E. Wedel Ptasie Mleczko Cherry, 12 oz (340g)

Ptasie Mleczko — bird's milk — is the confection Jan Wedel created in Warsaw in the 1930s, and it has been Poland's best-loved sweet ever since. This is the cherry version: vanilla marshmallow foam with a cherry jelly centre, under dark chocolate.

The foam is the point. It is far lighter than a marshmallow and collapses rather than chews, and the dark chocolate shell is thin enough to crack against it. The jelly carries 13% real cherry juice, so it reads tart rather than sweet.
