Orange and white label. Lighter and more open in texture than the Delba Pumpernickel — visible oat and rye kernels through the film give it a coarse, seeded look. Square slices, vacuum sealed. Serving suggestion shows cottage cheese, lettuce, cucumber and tomato.
Seven ingredients — whole kernel rye, water, whole rye flour, oat kernels, wheat germ, iodized salt, yeast. The oats and wheat germ give it more chew and a nuttier flavour than the plain rye loaves, and they show up in the numbers: the highest fibre and highest protein of the three Delbas, at 7 g and 5 g per slice. The most approachable of the three if a customer finds pumpernickel too intense.
Important for the listing: unlike the Delba Whole Rye and Pumpernickel, this one contains wheat germ, so the wheat free claim does not apply — and the front of the pack reflects that, with no wheat free tick where the other two have one.

Baked the European way
The EU bans potassium bromate and azodicarbonamide — two dough conditioners the United States still permits in flour. European bread is also typically long-fermented rather than rushed, and that slower process breaks down fructans: the FODMAPs behind a good deal of the bloating people blame on gluten.
This is not gluten-free bread — it is made with wheat and/or rye flour. But many of our customers tell us it sits easier than supermarket bread, and this is why.
