Potato, not pasta. Gnocchi are made from cooked potato bound with just enough flour to hold them, which is why they are soft rather than firm and cook in a few minutes instead of ten. Made to European food rules, where every additive has to be authorised before it can be used — in the United States a manufacturer can decide for itself that one is safe.

Shelf-stable potato gnocchi at eighty per cent potato, which is high and shows in the texture: softer and less doughy than the cheaper sort. Two to three minutes in boiling water and they float. Dress them simply — butter and sage, or a plain tomato sauce.
