Vilnius black rye — dense, dark and faintly sweet, made with rye malt and an ancient scalding method, and using only whole rye and whole wheat flour. Cut it thin; it is not a sandwich loaf.
Low fat, low sodium, no added colour and no preservatives.

Baked the European way
The EU bans potassium bromate and azodicarbonamide — two dough conditioners the United States still permits in flour. European bread is also typically long-fermented rather than rushed, and that slower process breaks down fructans: the FODMAPs behind a good deal of the bloating people blame on gluten.
This is not gluten-free bread — it is made with wheat and/or rye flour. But many of our customers tell us it sits easier than supermarket bread, and this is why.
