Four honeys that taste nothing like each other, which is the point of having more than one.

Breitsamer raw acacia stays liquid for years and is mild enough to convert people who think they dislike honey. The raw forest honey beside it is its opposite: made from honeydew that bees collect from tree sap rather than blossom, so it is dark, resinous and closer to malt than to flowers. IKA'S Garden raw pine honey is not made from flowers at all and carries a faint smoke and salt note that belongs on a cheeseboard. Maison Pébeyre truffle honey is unashamedly a luxury — a little of it over aged cheese or a warm pastry does the work of a whole course.
